How is it connected? You will learn these secrets at a unique tasting of Italian cheeses at the Paliesius Manor.
Italy has the richest variety of cheeses in the world, with as many as 300 varieties of cheeses of European protected origin, made from the milk of different animals: cows, sheep, goats. Many people have tasted parmiggiano reggiano, pecorino romano, gorgonzola, but in Lithuania the cheeses are more well-known as industrially produced cheeses, made by giant cheese-making consortia. Much more interesting, but harder to reach, is the world of small, unpasteurised milk cheeses, where the cheesemaker is both the shepherd and the continuator of the tradition of cheesemaking.
During the tasting, you will find out about the latest trends in gourmet-type cheese-making. You will learn how to taste cheeses professionally using all the sensory organs: eyes, nose, mouth, fingers (touch). You will enjoy four very rare Italian cheeses from four different regions of the country: Piedmont, South Tyrol, Veneto, Abruzzo.
What cheeses will we taste? Hard and semi-hard cheeses, with different maturities ranging from a few months to several months. First cheese: South Tyrolean 'malga' type cheese made from raw milk 'sacagna' from the Alpine highlands; Monte Veronese from the Veneto region, made from full-fat, whole, unpasteurised cow's milk; the original cheese of cheesemaker Occelli Long-ripened cow-sheep's milk cheese from the Lombardy region, aged with chestnut leaves; Montebore from the Piedmont region, an absolute masterpiece of cheese-making, mixed from three milk typologies: cow, sheep and goat.
